Well… they’ve arrived.
Our copper stills are finally in place - and it’s hard to put into words how it feels.
Years of planning, delays, meetings, rethinks and hard graft all led to this moment. For over 200 years, there hasn’t been a working whisky still in West Fife.
Today ensured that this is soon to be changed.
These stills aren’t just equipment - they’re the heart of Knockhill.
This is where the spirit will be born. Where the first drops of whisky will flow.
They represent everything we’ve been working towards.
There were no big speeches. No fanfare.
Just a few of us standing there, jackets on, grinning like kids.
One of the team raised a quiet toast when the last still was set.
It was Simple. Honest. Perfect.
Next up: commissioning, testing and getting ready to run spirit for the first time. That will be big for us.
